Elizabeth Shannon  was a fashion moldel beofre she started acting. She's widely known for her roles in movies such as Thirteen Ghosts, Scary Movie and American Pie; a movie which also coined her being a sex-symbol for her nude bedroom scene in the movie that was released in 1999. In the same year she posed for a nude picture in Playboy magazine, while in June 2008 she featured as Maxim's cover girl.

Elizabeth dated actor Joseph D. Reitmen for 10 years, three years of which they were married. The couple divorced late June 2005 and in April 2008, she started dating Derek Hough, her dancing partner in the show Dancing with the Stars. Elizabeth founded a non-profit organization called Animal Avengers dedicated to rescuing stray animals and finding a home for them, as well as preventing animal cruelty.

Elizabeth defined poker as a second career, and she was often described as one of the leading celebrity poker players. She often visits Las Vegas to play against the top players of the United States. She played in the Main Event of the 2005 World Series of Poker, mentored by Daniel Negreanu, and in 2006, she won a special tournament that celebrated the opening of a new poker room at Caesers Palace hotel, winning $55,000. In 2007 she made it to the semi-finals of the NBC National Heads Up Poker Championship defeating several top  poker professionals such as Jeff Madsen, Barry Greenstein and Humberto Brenes. Elizabeth used her Lebanese ancestry to play for Team Lebanon at the World Team event in Las Vegas in May 2010.
