This recipe is for 2 portions
2 chicken breasts cleaned without the skin
1 eggplant cut in round slices about 2-3cm each
2 large colour sweet peppers cut in quarters long wise
2 sticks of fresh thyme
Virgin Olive oil
Splash of balsamic vinegar
1 Fresh Lemon
Sea Salt and Pepper to taste

The meal we are going to introduce to you it is a low fat meal ,but also a really great combination of tender chicken breast with vegetables all cooked by our healthy standards easily and fast in a virgin olive oil.
Always try to buy chicken that is in free range from your local butcher store rather than large hypermarkets as the changes to be fresher are much more , Breast fillets taste much better when is fresh of course if the chicken is been slaughtered in the same day is better to leave the breasts in the refrigerator for 24 hours , not in the freezer as same day chicken will not be tendered if cooked.
Get a bowl and place the chicken breasts, put a splash of virgin olive oil and the fresh thyme, rub the chicken breasts, season well to taste with sea salt and pepper.
On another bowl put inside the eggplants and pepper again splash with the virgin olive oil and sea salt and pepper well, in this way when you put the eggplants on the griller, will not absorb the oil.
Pre-heat the oven at 200 Celsius fan, put in high heat the griller and place the breast fillets until they start to get the grill lines , then place in an oven-proof pan and place in the oven for about 15-20 minutes, the breast must not start to get golden brown on the top otherwise the meat will be chew.
Place on the griller the vegetables cook for 1-2 minutes and then splash with the balsamic vinegar. Continue to grill until the start to get soft but crunchy at the same time.
Get two round white warm plates and place one fillet on each with the vegetables on the side, with this dish I would prefer a nice chilled white wine.
